If you are searching for another easy chicken casserole recipe, this Fiesta Chicken Casserole is a great option! It is super simple to make using just a few simple ingredients. This casserole is filled with chicken, pasta, black beans, corn, seasonings, and lots of cheese. This filling casserole has been one of my family’s favorite dinners. This casserole is mild enough for the kids, but you can always adjust the heat accordingly.
This recipe is super versatile. You are welcome to use leftover chicken, a rotisserie chicken, or even canned chicken to make life easier. You can also use your favorite salsa. As for the cheese, you can use what you have on hand. Again, this recipe is quite easy and quick to make. It is also very adaptable.
INGREDIENTS
1 (10 ounces) can Ro-tel, do not drain
3 c. cooked chicken, shredded
1 c. instant rice
1 c. sour cream
2 tbsp taco seasoning
2 tbsp milk
2 c. Monterey Jack cheese, grated and divided
½ c. corn kernels
Fresh cilantro, chopped, for garnish
½ c. black beans, drained
How to make Fiesta Chicken Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a nonstick spray, grease a 9 x 9-inch baking dish and set aside.
Step 2: Place the chicken, Ro-Tel, rice, 1 ½ cups of cheese, sour cream, taco seasoning, milk, corn, and black beans in a large bowl. Mix well until combined.
Step 3: Into the prepared baking dish, pour the mixture and top with the rest of the cheese.
Step 4: Using foil, tightly tent the dish. Place in the preheated oven and bake for about 20 minutes. Remove the cover and continue to cook for another 5 to 10 minutes or until the cheese has melted and is bubbly.
Step 5: Remove from the oven when done and allow the casserole to sit for about 5 minutes.
