This Potsticker Noodle Bowls recipe is a simple skillet recipe that you can make in under thirty minutes! This veggie-filled dish tastes like potstickers without the hassle of filling and sealing!
INGREDIENTS
1 tbsp vegetable oil
1 lb ground pork
8 ounces of rice noodles
¼ c. low-sodium soy sauce
¼ c. low-sodium chicken broth
¼ c Tamari sauce
2 tsp rice vinegar
½ tbsp ginger, crushed or grated
2 eggs, beaten
2 tbsp low-sodium soy sauce
1 bunch of green onions, finely chopped
1 (14 ounces) bag of coleslaw mix
3 cloves garlic, crushed or minced
kosher salt and freshly ground pepper, to taste
¼ tsp red pepper flakes, optional
How to make Potsticker Noodle Bowls
Step 1: Following the package directions, soak the noodles in a shallow dish filled with water.
Step 2: Place the soy sauce, tamari sauce, chicken broth, rice vinegar, ginger, garlic, and red pepper flakes in a small bowl. Mix well until combined and set aside.
Step 3: In a large wok or pan, heat the vegetable oil over medium-high heat. Once the oil is hot, add the pork to the wok/pan and cook until no longer pink. Then, add the rest of the 2 tbsp soy sauce. Stir well and season with salt and pepper.
Step 4: To the pork in the wok/pan, add the coleslaw mix, green onions, and garlic. Continue to cook for 2 to 3 minutes more or until aromatic and the greens have wilted.
Step 5: In the middle of the skillet, create a well. Pour the beaten eggs into the well and cook for about 2 to 3 minutes or until the eggs are scrambled.
Step 6: Stir well and add the noodles along with the sauce mixture. Continue to cook for an additional 3 to 4 minutes or until the noodles are tender.
Step 7: If needed, adjust the seasoning according to taste.
Step 8: Remove from the heat and serve right away. Enjoy!
