Ingredients:
For Potato Wedges:
oil for frying
2 c all-purpose flour
4 large baked potatoes, chilled
1 teaspoon pepper
2 teaspoons Lawry’s seasoning salt or salt
1 teaspoon garlic powder
½ c Milk
1 teaspoon chili powder
2 large eggs
For Hot Pink Dipping Sauce:
⅓ c ketchup
4 tablespoons sriracha hot chili sauce
1 c mayonnaise
Directions:
For the Potato Wedges:
Place a large pot on the stove and turn the heat to medium-high. Add 2-inches of oil and allow it to become hot.
Add milk and eggs into a mixing bowl. Whisk until well blended.
In another mixing bowl, add chili powder, garlic powder, flour, pepper, and seasoning salt. Whisk everything until well incorporated.
Slice each potato into two, lengthwise. Cut each half into even smaller pieces.
Add each potato wedge into the bowl with the flour mixture, then toss until completely coated. Remove any excess flour by shaking them off.
Add the potato wedges into the bowl with the egg mixture, then toss again until completely coated.
Put the wedges back into the bowl with the flour mixture, then toss again until coated. Remove any excess flour.
Once the oil in the pot is hot, add about 5 potato wedges and cook for 2 minutes or until the sides turn golden brown.
Transfer them onto a clean plate lined with paper towels to drain excess oil. Repeat the process with the rest of the potato wedges. Season the potato wedges with a bit of salt.
To Make the Dipping Sauce:
In a mixing bowl, add all the ingredients for the dipping sauce. (Ketchup, chili sauce, and mayonnaise) Stir everything until well blended.
Serve with potato wedges. Enjoy!
