This recipe just became my favorite! I learned how to make this Slow Cooker Lemon Chicken about a month ago. I am so glad that I gave it a try because I never would have tasted perfection! Allow me to share this recipe with you today. I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! Enjoy this complete meal with your family. You won’t need anything else! 3 to 6 hours of cooking time is so worth it once you taste this dish!
Ingredients:
1-1.5-pound baby potatoes
2 tablespoons honey
4 cloves garlic
½ tablespoon fresh thyme leaves
2 tablespoons olive oil
A bunch of thin green asparagus
6-8 chicken thighs – bone-in, skin on
1 lemon
sea salt
pepper
1 red onion (peeled)
Directions:
Slice the peeled onion, then scatter them to the bottom of the slow cooker.
Lay the chicken thighs over the onion slices and arrange them in a single layer.
Wash the potatoes with running water to remove any dirt, then slice each in half. Place them over the chicken in the slow cooker.
In a mixing bowl, add lemon juice, honey, lemon zest, olive oil, thyme, salt, garlic, and pepper. Stir everything until well incorporated. Add the mixture to the slow cooker.
Cover and seal the slow cooker, then cook everything for about 3 to 4 hours on a high setting or 6 to 8 hours on a low setting.
Add the asparagus about 20 minutes before the cooking time ends. Cook for the remainder of the remaining time.
