Ingredients:
2 tbsp olive oil
3 cloves garlic, minced
1 tsp grated fresh ginger
¾ c sweet peppers, thinly sliced
3 packs ramen, seasoning packet discarded
1 ½ pounds med-large shrimp, peeled and deveined
1 ½ tbsp brown sugar
2 c shredded green cabbage
6 c chicken, vegetable, or seafood stock
½ c onion, thinly sliced
1-2 tbsp sriracha, depending on your heat level
¾ c carrots, thinly sliced
Cilantro
3 tbsp soy sauce
juice of 1 lime
Directions:
Place a skillet on the stove and turn the heat to medium. Add 1 tbsp of olive oil and allow it to become hot.
Add the shrimp into the hot skillet, then cook each side for about a minute or two just until they turn pink. Sprinkle salt and pepper to taste. Remove from the heat.
Place a large pot on the stove and turn the heat to medium-high. Add 1 tbsp of olive oil and allow it to become hot.
Add the peppers, cabbage, garlic, and ginger. Sauté for a few minutes until soft and aromatic.
Add the sriracha mix, soy sauce, sugar, stock, brown sugar, and lime juice. Stir until well blended. Allow the mixture to boil.
Turn the heat down to medium, then simmer everything for about 8 minutes.
Add the noodles, then stir and cook for about 2 to 3 minutes.
Spoon the soup and noodles into individual serving bowls, then top each with shrimp and freshly chopped cilantro.
Serve immediately. Enjoy!
