Ingredients:
2 tbsp Dijon mustard
1 tsp thyme, chopped
2 lbs. onions, sliced
1 tbsp balsamic vinegar
1 lb. chicken breasts or thighs (optionally boneless and skinless)
salt and pepper to taste
2 c beef broth or chicken broth
2 tbsp flour
3 tbsp butter
1 cup gruyere, grated
2 cloves garlic, chopped
1 tbsp olive oil
Directions:
Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the onions into the hot pan, then sauté for about 3 minutes or until soft.
Add thyme, flour, and garlic, then sauté for one minute or until aromatic.
Add ½ of the broth, then scrape the bottom of the pan to get the browned bits. Stir until well blended and allow the mixture to boil.
Turn the heat down to low, then simmer the mixture for about 5 minutes.
In a separate pan over medium-high heat, add oil and allow it to become hot.
Sprinkle salt and pepper over the chicken, then toss until well coated.
Put the chicken into the hot pan, then sear each side for about 4 minutes or until they turn brown.
Add the rest of the broth into the pan with the chicken, then stir until well blended.
Add mustard and balsamic vinegar, then stir again until well blended. Simmer the mixture for a couple of minutes until it reduces its volume.
Scatter the onions into a heat-proof pan.
Place the chicken over the onions and arrange them in a single layer.
Add the broth over the chicken, then cover the pan with aluminium foil.
Place the pan in the preheated oven and bake the French Onion Chicken for about 20 minutes.
Remove the foil cover, then sprinkle the cheese over the chicken. Broil for a few minutes until the cheese has melted completely. This usually takes about 2 to 4 minutes.
