Ingredients:
1 pound of ground Italian sausage (hot or mild)
4 large cloves of garlic, minced (about 2 tbsp)
1 medium onion, diced
½ tsp of black pepper
8 oz. of dried spaghetti, broken in half
1 sweet bell pepper (red, orange, or yellow), diced
2 tsp of dried Italian seasoning OR oregano
2 tbsp of cooking oil (like olive oil or butter)
¾ c of full-fat canned coconut milk OR heavy cream
1 tbsp of lemon juice OR vinegar (like white wine vinegar or balsamic vinegar)
½ tsp of sea salt
¼ tsp of crushed red pepper flakes
1 (15 ounces) can of fire-roasted diced tomatoes
3 c of low-sodium broth (beef, chicken, or vegetable)
½ c of grated or shredded cheese (like Parmesan, mozzarella, or an Italian blend – optional)
1 tbsp of dried fennel seed (optional)
Directions:
Put a Dutch oven on the stove and turn the heat to medium-high. Add the cooking oil and allow it to become hot.
Add the bell pepper and onion, then sauté for about 3 minutes or until soft.
Turn the heat down to medium, then add the garlic and sauté for a minute or until aromatic.
Add the sausage, then cook for about 5 minutes or until crumbly and brown.
Add the spaghetti, tomato slices, broth, and dried spices. Stir until well combined. Make sure to submerge the spaghetti completely. Add more broth if necessary.
Cover the pot with the lid and allow the mixture to simmer for 3 minutes. Make sure to stir from time to time.
Turn the heat down to medium-low, then cook the spaghetti for about 10 minutes.
Add the heavy whipping cream and stir until well blended. Cover the pot and cook for 5 more minutes.
Remove the pot from the heat, then add grated cheese, salt, and lemon juice. Stir until mixed. Let it rest for at least 5 minutes before serving.
Top each serving with cracked black pepper, olive oil, and more cheese.
