Ingredients:
½ pound (8 ounces) white mushrooms
4 teaspoons of Cajun seasoning
½ c chicken broth
½ teaspoon black pepper
4 tablespoons butter
1 ½ pounds (24 ounces) of red potatoes
1 (12 ounces) package Cajun style andouille sausage
¾ teaspoon kosher salt
1 ½ pounds (24 ounces) of green beans
Directions:
In your slow cooker, add the chicken broth.
Slice the sausage into thin pieces. Slice the red potatoes into 1-inch cuts.
Wash the green beans with water to remove any dirt, then remove the tips. Slice the mushrooms into four.
Add the sausage, green beans, mushrooms, and potatoes into the slow cooker.
Sprinkle Cajun seasoning, salt, and pepper over the ingredients in the slow cooker. Toss everything until well incorporated.
Slice the butter into 8 even pieces, then add them into the slow cooker.
Cover and seal the slow cooker, then cook everything for about 4 hours or until the potatoes are easily pierced with a fork. Stir everything until well blended.
Serve right away. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge.
You can skip the mushrooms for this recipe if you prefer.
I highly suggest using fresh green beans for this recipe.
You can use different types of potatoes for this recipe.
Feel free to use andouille instead of kielbasa sausage.
