This recipe is insanely delicious yet very healthy both at the same time! In less than 30 minutes, this Skinny Chicken Marsala is ready for serving! Don’t skip on this recipe!
Ingredients:
2 tsp olive oil
3 garlic cloves, minced
1 tbsp unsalted butter
3 oz. sliced shiitake mushrooms
⅓ c Marsala wine
¼ c plus 1 tsp all-purpose flour
¼ c finely chopped shallots
2 large boneless, skinless chicken breasts (8 oz. each)
½ c Swanson 88% fat-free chicken broth I used chicken stock since it was all I had on hand
8 oz. sliced cremini mushrooms
2 tbsp chopped fresh parsley
Kosher salt
Freshly ground black pepper
Directions:
Prepare the oven and preheat to 100 degrees C or 200 degrees F.
Slice the chicken in half, then slice each half into two to get 4 pieces.
Cover each piece with plastic wrap, then gently pound it into about ¼-inch thick. Repeat the process with the rest of the chicken pieces.
Sprinkle salt and pepper over the chicken, then toss until well coated. Coat them with flour as well and make sure to shake off any excess.
Lay the chicken pieces onto wax paper.
Place a large nonstick skillet on the stove and turn the heat to medium-high.
Add ½ tbsp of butter and 1 tsp of olive oil, then allow them to become hot. Swirl the pan to evenly coat with the oil.
Add the chicken pieces, then brown each side for about 3 minutes.
Move the chicken pieces into a baking dish. Cover them with something to keep warm.
In the empty skillet, add ½ tbsp of butter and 1 tsp of olive oil.
Add the garlic and shallots, then sauté for a few minutes until aromatic and soft.
Add the mushrooms, salt, and pepper. Stir and cook for a few minutes until the mushrooms are soft.
Add 1 tsp of flour, then whisk and cook for a minute or until just brown.
Add the chicken broth, parsley, and Marsala wine. Scrape the bottom of the skillet to get the browned bits. Stir everything until well blended.
Add the chicken pieces back into the skillet, then toss until well coated with the sauce.
Turn the heat down to low and simmer everything for 5 more minutes.
Serve right away and enjoy!
