Prosciutto-Wrapped Breadsticks

Ingredients:
Thinly sliced prosciutto
Thin breadsticks (also called Grissini)
Directions:
Slice the prosciutto into two, then wrap it around the breadsticks.
Pork Tenderloin Stuffed with Shallots, Poached Pears, and Blue Cheese
Total time: 45 Min
Ingredients:
2 c white wine
½ c crumbled blue cheese
3 sprigs of rosemary
2 ½ feet of butcher’s twine
1 tablespoon Salted Butter
½ cup chicken broth
½ teaspoon salt
¼ tsp black pepper
2 teaspoons olive oil
1.5 lbs. pork tenderloin
2 Bosc pears (2 c once diced)
2 medium shallots (1 c once sliced)
Directions:
Prepare the oven and preheat to 425 degrees F.
Thinly slice the shallots and slice the pears into small squares.
Place an oven-proof pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the shallots, ⅛ tsp pepper, and ¼ tsp salt. Saute until soft.
Add white wine and pears, then stir until well blended. Simmer for 12 minutes.
Horizontally slice the pork tenderloin to the middle.
Add the pears and shallots in the middle of the tenderloin to stuff it.
Scatter the crumbled blue cheese over the pears.
Add the rosemary over the cheese, then tie everything up with butchers’ twine. Sprinkle salt and pepper on top.
In the same pan, add olive oil and allow it to become hot.
Add the tenderloin, then sear each side for about 3 minutes or until brown.
Cover the pan, then transfer it inside the preheated oven. Bake the tenderloin for 12 minutes or until done.
Remove from the oven and allow the tenderloin to rest for a few minutes at room temperature. Slice into pieces.
In the same pan with the tenderloin juices, add chicken broth and scrape the bottom to get the browned bits.
Place the pan on the stove and turn the heat to medium. Simmer for about 5 minutes or until thick.
Serve the tenderloin with the sauce. Enjoy!

Vanilla ice cream
1 c dip coffee or 2 shots espresso
Directions:
Prepare the coffee ahead of time and allow it to cool.
Add vanilla ice cream to 2 serving bowls, then add the coffee on top together with raspberries. Enjoy!
