Ingredients:
1 tbsp chopped onion
1 tbsp chopped green bell pepper
2 Eggs
1 tbsp chunky salsa
2 fresh mushrooms, sliced
2 tbsp chopped fresh tomato
½ c shredded Cheddar cheese
2 slices of ham, chopped
Directions:
In a large resealable bag, add 2 cracked eggs. Remove any air inside and seal it. Shake the bag until the eggs are well beaten and smooth.
Open the bag, then add the onion, bell pepper, salsa, mushrooms, tomato slices, ham, and cheese. Seal the bag again and shake it until everything is well blended.
Place a large pot with 4 cups of water on the stove and turn the heat to high. Allow the water to boil.
Add the bag with the omelette mixture into the boiling water, then cook for about 20 minutes or until done.
Remove the bag from the pot using a tong.
Remove the omelette from the bag, then unroll it onto a clean serving plate.
Sprinkle your preferred greens on top to garnish.
Serve and enjoy!
Notes:
You can make more omelettes and put them in separate bags, then cook them in boiling water. If you are serving more than yourself, then you should double or triple the ingredients.
I suggest you only use BPA-Free bags for this recipe because they don’t have toxins! This is important.
