You will be amazed at how crispy baked chickens are! You can serve them as is or with the Honey Mustard Sauce (recipe below). Ingredients:
BREADCRUMB:
Oil spray
1 ½ c panko breadcrumbs
BATTER:
2 tablespoons flour
1 Egg
½ teaspoon salt
Black pepper
1 ½ tablespoon Dijon mustard or other mustard
1 tablespoon mayonnaise
CHICKEN:
Oil spray
500 g chicken tenderloins (or breast, cut into ⅔-inch / 1.5cm thick slices, lengthwise)
Directions:
Prepare the oven and preheat to 390 degrees F.
Scatter Panko breadcrumbs into a baking pan. Apply cooking spray over them.
Place the breadcrumbs inside the preheated oven and bake for about 5 minutes or until they become golden brown. Move into a mixing bowl.
In a mixing bowl, add all the ingredients for the batter. Whisk until well blended.
Add the chicken tenderloins into the bowl with the batter, then toss until well coated.
Dredge each chicken into the bowl with panko breadcrumbs. Put them onto a baking tray.
Place the baking tray inside the preheated oven and bake the chicken for about 15 minutes.
Remove from the oven and allow the chicken to rest for a few minutes at room temperature to incorporate all the flavors.

Notes:
To Make Honey Mustard Sauce:
Add 2 tablespoons Dijon mustard, ⅓ cup of mayonnaise, salt, pepper, 1 lemon juice, and 2 tablespoons honey into a mixing bowl. Stir until well blended.
Serve with the baked chicken.
Place any leftovers in an airtight container, then place them inside the fridge.
