Ingredients:
½ green bell pepper, diced
3 tbsp Cajun spice blend
1 lb. chicken breast, cut into 1-inch pieces
½ red onion, thinly diced
½ red bell pepper, diced
1 c chicken broth
½ lb. andouille sausage, sliced into ½-inch thick pieces
1 lb Fettucine pasta, cooked but not rinsed
½ lb. shrimp deveined
¼ tsp ground black pepper
3 tbsp canola oil
1 medium tomato, diced
3 cloves garlic, minced
Parsley and leftover minced bell peppers for garnish
½ teaspoon kosher salt
Directions:
Add sausage, bell peppers, chicken, garlic, salt, pepper, Cajun spices, shrimp, and red onion into a large mixing bowl. Stir until well combined.
Place a large skillet on the stove and turn the heat to high.
Add canola oil and allow it to become hot.
Add mixed ingredients, then sear for 5 minutes.
Add chicken stock and tomatoes, then stir until well mixed. Cook for about a minute and make sure to scrape the bottom of the skillet to get the browned bits.
Add the cooked pasta, then toss until well coated with the sauce.
Remove from the heat. Sprinkle minced bell peppers and freshly chopped parsley on top to garnish.
Serve right away. Enjoy!
Notes:
If you want a creamy sauce, add ½ cup of heavy cream together with the stock.
You can make your homemade Cajun seasoning just by simply mixing these ingredients:
¼ teaspoon cayenne pepper
¼ teaspoon dried oregano
¼ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon ground black pepper
