If you haven’t decided on a recipe to try for tonight, then you have got to give this one a try! These Oven Baked Greek Chicken Thighs are total crowd favorites! Serve these to your loved ones, and I promise you that leftovers will be the least of your problems! These chicken thighs are marinated in garlic, lemon, spices, and yoghurt! If you have more time to spare, I suggest you marinate them overnight. Enjoy!
Ingredients:
1.5 pounds boneless, skinless chicken thighs
For The Marinade:
4-5 cloves of garlic, pressed or minced
2 tbsp dried Italian seasoning I used my homemade blend, make sure yours has no added salt
1 tsp kosher salt
zest of one lemon
½ tsp freshly ground black pepper
¼ c olive oil
½ c plain Greek yoghurt, full fat preferred
⅓ c lemon juice
Directions:
In a large mixing bowl, add all the ingredients for the marinade. Stir everything until well blended.
Add the chicken into the bowl with the marinade, then toss until well coated. Marinate in the fridge for a minimum of 15 minutes or overnight.
Prepare the oven and preheat 218 degrees C or 425 degrees F.
Line with foil onto a baking sheet.
Remove the chicken from the marinade and shake off any excess.
Lay the marinated chicken thighs onto the prepared baking sheet and arrange them in a single layer.
Place the baking sheet inside the preheated oven and bake the chicken thighs for about 20 to 25 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature to incorporate all the flavors.
