This flavorful Jamaican Curry Chicken is my ultimate comfort food! Everyone needs to taste how awesome this chicken dish is. In just 45 minutes, you will surely enjoy lunch or dinner!
Ingredients:
1 medium onion, chopped
2 scallions sliced
4 garlic cloves, chopped finely
1 medium sweet potato or 2 small ones, chopped
6 chicken thighs, cut into pieces skinless or skin on
4 pimento berries or ¼ tsp allspice
¼ tsp ground ginger
6 sprigs of fresh thyme or 1 tbsp dried
1 c hot water 250 ml
2 tbsp coconut oil or olive oil
1 tsp all-purpose seasoning
Himalayan pink salt to taste
3 tbsp Jamaican curry powder
1 tsp black pepper
Directions:
In a large mixing bowl, add the chicken pieces and use a fork to poke small holes all over.
Add garlic, curry powder, onion, black pepper, scallions, ginger, and all-purpose flour over the chicken. Toss everything until well combined.
Cover the bowl with saran wrap, then place it inside the fridge. Marinate the chicken for a couple of hours to overnight.
Place a pot on the stove and turn the heat to medium.
Add oil and allow it to become hot. Sprinkle 1 tablespoon of curry powder and cook for about a minute.
Remove the chicken from the marinade, then add them to the hot oil. Sear each side for a few minutes until they turn brown.
Add the garlic, onion, and scallions. Sauté for a few minutes until aromatic and soft.
Add pimento berries and fresh thyme sprigs. Stir until well blended.
Add water and allow the mixture to boil.
Turn the heat down to low, then cover the pot and simmer everything for about 10 minutes.
Add the pink salt and sweet potatoes, then stir until well mixed. Simmer for 20 more minutes or until the potatoes are fork-tender.
