Packed with incredible flavors, every bite of this potato ball is perfectly seasoned! If you have leftover mashed potatoes, then don’t put them to waste! Instead, try this recipe and you will surely love it! Potatoes, bacon, cheese, and herbs in one potato ball. What’s not to love? Enjoy!
Ingredients:
oil for deep frying
½ c dry bread crumbs
¾ c shredded cheddar cheese
¼ c real bacon bits
2 tbsp chopped Italian parsley leaves
1 large Egg, lightly beaten
2 c cold leftover mashed potatoes
Directions:
In a large mixing bowl, add the mashed potatoes and allow them to rest for at least half an hour on the counter.
Add the cheddar cheese, chopped parsley, bacon bits, and egg. Stir everything until well blended.
Form 1-inch balls out of the potato mixture.
Add bread crumbs onto a clean plate, then roll each potato ball on it until well coated. Shake off any excess.
Place the potato balls inside the fridge for at least 15 to 30 minutes.
Place a skillet on the stove and turn the heat to 375 degrees F or 190 degrees C.
Add 1-inch of oil and allow it to become hot.
Add the potato balls in batches, then cook all sides for a few minutes until they turn golden brown.
Transfer the Mashed Potato Balls onto a clean plate lined with paper towels to drain any excess oil. Repeat the process with the rest of the potato balls.
Serve right away. Enjoy!
Notes:
It is important to mash the potatoes before mixing them with the rest of the ingredients.
Also, do not overcook them. Remove them from the oil as soon as they turn golden brown.
