Ingredients:
¼ tsp garlic or onion powder
1 c shredded cheddar cheese
1 head cauliflower or a 16 oz bag of frozen cauliflower
olive or canola oil
¼ c Parmesan cheese
2 large Eggs
1 c bread crumbs panko or Italian, I used panko
½ teaspoon cayenne pepper more or less to taste
½ tsp Italian seasoning optional
½ tsp salt
¼ tsp pepper
Directions:
Slice the cauliflower into small pieces (florets).
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the cauliflower florets and cook for 8 to 10 minutes or until soft. Drain and transfer florets into a food processor. Pulse until finely crushed or similar to rice.
Transfer the cauliflower rice into a mixing bowl.
Add the breadcrumbs, eggs, cheeses, and seasoning into the bowl with the cauliflower rice. Stir everything until well incorporated.
Form patties out of the cauliflower mixture.
Place a skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the patties into the skillet, then cook each side for 3 minutes or until they turn golden brown.
Transfer the Cauliflower Fritters onto a clean plate lined with paper towels to drain excess oil.
Serve warm with sour cream. Enjoy!
