This Eggplant Lasagna with Meat Sauce is so irresistible! I never thought that eggplant would taste like this! Try this recipe now, and I promise you that it is worth all your time and effort. Enjoy!
Ingredients:
1 c Parmesan cheese, shredded
1 tablespoon dried oregano
1 large Eggplant
8 small fresh basil leaves, chopped
2 c mozzarella cheese, shredded
6 c Hearty Tomato Meat Sauce
2 c full-fat ricotta cheese
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with foil onto a baking sheet.
Slice and remove the ends of the eggplants, then slice each into ¼-inch cuts.
Brush olive oil over each eggplant slice, then season it with salt and pepper.
Place the eggplant slices onto the prepared baking sheet.
Place the baking sheet inside the preheated oven and bake the eggplant slices for about 7 minutes per side.
Meanwhile, add basil, Parmesan cheese, and ricotta cheese into a mixing bowl. Stir until well blended.
Add 2 cups of sauce into an 8×13-inch baking dish and spread it evenly.
Add ½ of the eggplant slices over the sauce.
Add ½ of the ricotta mixture on top of the eggplant. Top with half a cup of mozzarella cheese.
Spread 2 cups of meat sauce over the cheese. Repeat the process with the rest of the ingredients ending with cheese.
Top the lasagna with oregano.
Cover it with aluminium foil.
Place it inside the preheated oven and bake for about 30 minutes.
Remove the foil cover, then broil for another 5 minutes on a high setting.
Remove the lasagna from the oven and allow it to rest for at least 15 minutes at room temperature.
