A different kind of pizza! This Spinach Artichoke Pizza is not only easy to make but it is also very satisfying to eat! You are going to love this after one bite, I’m sure of it!
Ingredients:
2 tablespoons all-purpose flour
2 tablespoons extra virgin olive oil, divided
2 ounces shredded mozzarella cheese (½ c)
6-8 canned artichoke hearts, drained well and quartered (don’t use marinated)
2 ounces finely shredded Parmesan cheese (lightly packed ½ c)
¾ c milk
16 ounces pizza dough, homemade or store-bought
¼ teaspoon onion powder
2 tablespoons butter
8 ounces fresh spinach, divided
1 clove of garlic, minced
Salt and freshly ground black pepper
Red pepper flakes, for serving (optional)
4 ounces provolone cheese (1 c. I used deli slices and chopped)
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place the pizza stone inside the preheating oven.
Place the pizza dough onto a sheet of parchment paper, then stretch it out to about a 13-inch round shape making a rim on the sides.
Brush the prepared pizza dough with 1 tablespoon of olive oil and sprinkle salt and pepper.
Place a saucepan on the stove and turn the heat to medium-high.
Add one tablespoon of olive oil and allow it to become hot.
Add ¾ of the spinach into the hot pan, then sauté for a few minutes until wilted.
Remove the sauteed spinach from the pan and transfer them onto paper towels. Fold the paper towels, then press the spinach to remove the excess water. Finely chop the spinach.
Melt butter in the same pan.
Add onion and sauté for 2 minutes or until soft.
Add flour, then whisk and cook for a minute to remove the raw taste.
Add milk, then whisk until well blended. Simmer for a few minutes until thick. Season with salt and pepper.
Remove the skillet from the heat.
Add the chopped spinach and minced garlic into the pan. Stir until well incorporated.
Add the spinach Bechamel sauce over the pizza dough and spread it evenly.
Spread the chopped fresh spinach over the sauce.
Sprinkle chopped artichokes and the cheese over the spinach.
Add parchment paper under the pizza, then put it over the pizza stone.
Bake the pizza for about 10 to 13 minutes.
Remove from the oven and slice into even servings.
