Ingredients:
MEATLOAF
2 large Eggs
1 ⅓-1 ½ c whole milk
2 pounds of ground beef
2 boxes (6 ounces each) of dried stuffing mix (I like the savory herbs variety)
1 large yellow onion, finely minced (divided)
1 teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons glaze
BROWN SUGAR KETCHUP GLAZE
1 tablespoon yellow mustard
½ teaspoon black pepper
2 tablespoons finely minced onion
2 teaspoons white vinegar
¼ c light brown sugar
1 ½ c ketchup
Directions:
Line the bottom and sides of a 6-quart slow cooker with aluminium foil, then apply cooking spray to it.
In a mixing bowl, add eggs, stuffing mix, salt, pepper, milk, ground beef, and the rest of the minced onions (set aside 2 tablespoons for later use.) Mix until well incorporated with your clean hands.
In a separate mixing bowl, add all the ingredients for the ketchup glaze. Stir until well blended.
Form the meat mixture into a round shape, then lay it in the prepared slow cooker.
Add ½ cup of the glaze over the meatloaf and spread it evenly.
Cover the slow cooker, then cook the meatloaf for about 6 hours on a low setting.
Transfer the meatloaf onto a baking sheet.
Add ⅔ cup of the glaze on top of the meatloaf and spread it evenly.
Broil the meatloaf for a few minutes or until done. Slice into even cuts.
Serve with the rest of the glaze. Enjoy!
