Ingredients:
¾ c milk
4 tablespoons unsalted butter, melted
6 small carrots, peeled and diced
1 rotisserie chicken, white and dark meat shredded and skin removed
4 c chicken stock
3 ribs celery, diced (about 1 c)
1 sweet onion, diced
2 c all-purpose flour
1 can cream of onion soup you can also use cream of chicken or cream of celery
½ teaspoon dried thyme
½ c fresh parsley, finely chopped
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
2 tablespoons unsalted butter
4 teaspoons baking powder
1 teaspoon salt
Directions:
Place a large stock pot on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the onion, carrots, parsley, celery, and seasonings. Sauté for about 5 minutes or until soft.
Add chicken stock, shredded chicken, and cream of onion soup. Stir until well blended. Allow the mixture to boil, then immediately turn the heat down to simmer.
Meanwhile, add baking powder, salt, and flour into a mixing bowl. Whisk until well combined.
In another mixing bowl, add melted butter and milk. Whisk until well blended.
Transfer the milk mixture into the bowl with the flour mixture, then whisk until well mixed and forms into a dough.
Scoop the dough, then drop each into the pot.
Cover the pot and cook everything for another 25 minutes over low heat.
