Take those boring corn to the next level with this awesome recipe! This Grilled Mexican Corn (Elote) is so good. Well-seasoned corn that you can eat pretty much any time of the day! Ingredients:
½ c cotija cheese, crumbled
fresh lime juice, from about 2 medium limes
chili powder, cayenne powder, and/or smoked paprika, for sprinkling as desired
6 ears of fresh corn, husked and cleaned
¼ c mayonnaise
¼ c Mexican crema (sour cream may be substituted), or as necessary for consistency
2 cloves garlic, finely minced or pressed
fresh cilantro for garnishing, optional
vegetable oil, for brushing
Directions:
Prepare the grill and preheat to medium-high.
Add garlic, mayonnaise, and Mexican crema into a medium mixing bowl. Stir until well blended. Add more Mexican crema if the texture of the mixture gets too thick.
Brush with oil the grates of the grill.
Place the corn over the grill, then cook all sides for about 8 to 10 minutes or until done.
Transfer the corn onto a clean plate, then brush them with the mayonnaise mixture.
Sprinkle cheese over the corn.
Squeeze lemon juice over each corn, then sprinkle smoked paprika, cayenne powder, and chili powder on top to season.
Sprinkle freshly chopped cilantro on top to garnish.
Serve right away and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days.
