Ingredients:
3 large Eggs
1 c sour cream
20 oz. crushed pineapple, drained well
½ tsp baking soda
1 c sugar
2 c sweetened shredded coconut
1 ½ c flour
½ c butter
½ tsp salt
Directions:
Prepare the oven and preheat to 162 degrees C or 325 degrees F.
Apply cooking spray to a loaf pan.
Add coconut onto a baking sheet and spread it evenly.
Place it inside the preheated oven and bake for about 6 to 10 minutes or until done. Make sure to shake the tray once or twice.
Add sugar and butter into the bowl of a stand mixer, then beat on a high speed until smooth. This usually takes about a minute or two.
In a mixing bowl, add salt, flour, and baking soda. Whisk until well blended.
Add the eggs gradually and beat every addition until well blended.
Alternately add sour cream and flour mixture, then whisk every addition until well incorporated.
Add 1 cup of coconut flakes and pineapple, then stir until well mixed.
Transfer the batter into the prepared loaf pan and spread it evenly.
Sprinkle the rest of the coconut flakes over the batter.
Place it inside the preheated oven and bake for about 1 hour 5 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow it to rest for a few minutes at room temperature.
