Ingredients:
For the White Wine Tomato Basil Sauce:
A pint of cherry tomatoes, sliced in half
¼ c dry white wine
3 large cloves garlic, finely minced
½ c fresh basil, finely chopped
¼ tsp crushed red pepper flakes
1 tsp granulated sugar
¼ tsp fresh ground black pepper (more to taste)
2 tbsp fresh lemon juice
½ tsp salt (more to taste)
½ tsp fresh lemon zest
2 tbsp olive oil
For the Cod:
1 ½ lbs fresh cod, cut into 4 fillets (or four 6 oz. fillets)
Salt and pepper
2 tbsp olive oil
Directions:
To Make the White Wine Tomato Basil Sauce:
Place a large pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the garlic and crushed red pepper flakes. Saute for a minute or until aromatic.
Put the cherry tomatoes into the pan, then saute for about 9 to 12 minutes or until soft.
Pour in the wine, then stir until well blended. Bring the mixture to a simmer.
Add lemon zest, basil, pepper, sugar, salt, and lemon juice. Stir until well blended. Simmer for 2 more minutes.
Pour the sauce into a mixing bowl. Set aside for later use.
For the Cod:
Place a large pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Use paper towels to pat dry the cod.
Sprinkle salt and pepper over the cod, then toss until well coated.
Put the cod into the hot skillet, then cook each side for about 3 minutes or until golden brown.
Add the white wine, and tomato basil sauce on top of the cod, then simmer for one minute.
