Ingredients:
1 tbsp extra virgin olive oil
salt and pepper to season
1 ½ pound pork tenderloin
2 tbsp Dijon mustard
¼ c brown sugar
Brown Sugar Dijon Dipping Sauce:
2 tbsp mayonnaise
2 tbsp Dijon mustard
1 ½ to 2 tbsp brown sugar
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Sprinkle salt and pepper over the pork tenderloin, then toss until well coated.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the pork tenderloin into the skillet, then cook each side for 2 minutes or until they turn brown,
Transfer the pork tenderloin into an oven-safe baking pan.
Brush Dijon mustard all over the tenderloin.
Sprinkle brown sugar over the pork, then gently press it.
Place the baking pan inside the preheated oven and bake the tenderloin for about 20 to 25 minutes or until done.
Remove from the oven and allow the pork tenderloin to rest for at least 5 minutes at room temperature. Slice into even servings.
