Fall apart meat smothered in a delicious sauce with some veggies. This Easy Homemade Beef Stew is the perfect example of comfort food! Dinner will be awesome again if you only give this recipe a try!
Ingredients:
1 Large Carrot or two small-medium, cut into 2-inch chunks
2 Yukon Gold Potatoes, diced into 2-inch pieces
½ Yellow Onion, Chopped Large
4 Garlic Cloves, minced
2 tablespoons Gluten-free All-Purpose Flour or Whole Wheat for non-gluten
2 c Beef Broth
2 teaspoons Fresh Thyme Leaves to garnish
2 tablespoons Olive Oil
2 pounds of Beef Chuck Roast cut into 2-inch chunks; excess fat removed
½ teaspoon Coarsely Ground Black Pepper
1 Tsp Kosher Salt
1 Bay Leaves
¼ c Tomato Paste
1 tablespoon Worcestershire Sauce
Directions:
Prepare the oven and preheat to 160 degrees C or 325 degrees F.
Sprinkle salt and pepper over the beef chunks, then toss until well coated.
Sprinkle flour over the beef chunks, then toss them again until well coated. Shake off any excess.
Place a Dutch oven on the stove and turn the heat to medium-high.
Add olive oil and let it sizzle.
Add the beef chunks, then sear each side for about 4 minutes or until they turn brown. Transfer the chunks onto a clean plate. Cover them to keep warm.
In the empty Dutch oven, add carrots, onions, and garlic. Sauté until soft and aromatic.
Add bay leaf, potatoes, tomato paste, beef broth, thyme, and Worcestershire sauce. Stir until well mixed.
Scrape the bottom of the Dutch oven to get the browned bits.
Simmer everything for a few minutes, then put the beef chunks back into the pot.
Cover the Dutch oven, then remove it from the stove.
Place the Dutch oven in the preheated oven and cook everything for about 2 hours or until the beef chunks are fork-tender. Add more seasonings if needed.
Serve warm and enjoy!
Note:
Make sure to add more broth if you like.
