Ingredients:
½ bunch Italian parsley, minced
4 cloves garlic, minced
1 28 ounces can of crushed tomatoes
1 red onion, diced
1 box of lasagna noodles, dried
1 pound andouille sausage, fresh, casing removed
1 ½ tbsp creole seasoning
1 pound ground turkey
1 bell pepper, diced
1 tbsp Italian seasonings
1 tbsp black pepper
1 stalk celery, diced
1 tsp crushed red pepper
2 c chicken broth
1 6 ounces can tomato paste
1 tsp sugar
1 tbsp garlic powder
1 tbsp onion powder
FOR THE RICOTTA/CHEESE MIXTURE:
2 Eggs, beaten
2 c jack cheese, grated
8 ounces fresh mozzarella cheese, grated
extra virgin olive oil
2 c ricotta cheese
1 c parmigiana Reggiano cheese, grated
2 c sharp cheddar cheese, grated
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt. Cook for about 6 minutes or until al dente. Drain and rinse to stop the cooking process.
Drizzle oil over the pasta and toss until well coated.
In a mixing bowl, add all the ingredients for the seasonings. Stir until well blended.
Place a large soup pot on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and allow it to become hot.
Add the celery, onion, and bell pepper. Sauté until soft.
Add the garlic and sauté until aromatic.
Add the andouille sauce and ground turkey, then cook until crumbly and brown. Sprinkle ½ of the seasonings to taste.
Add the tomato paste, then stir and cook for about 5 minutes.
Add the chicken broth, crushed tomatoes, and the rest of the seasonings. Stir until well blended.
Reduce the heat to medium-low, then add parsley and stir until well mixed. Simmer everything for about 20 minutes.
For the Cheese Mixture:
Add mozzarella cheese and Jack cheese into a mixing bowl. Stir until well mixed.
In another bowl, add Parmigiano Reggiano, 1 cup sharp cheese, ricotta cheese, eggs, Jack, and mozzarella cheese. Stir until well mixed.
To Assemble
Apply cooking spray to a 13×9-inch casserole dish.
Add 1 cup of pasta sauce to the prepared casserole and spread it evenly.
Add lasagna noodles over the sauce. Arrange them in a single layer overlapping each other.
Add pasta sauce on top and spread it evenly.
Add 6 tbsp of the cheese mixture on top.
Sprinkle grated cheeses on top. Repeat the process until everything is arranged in layers.
Cover with aluminium foil.
Place it inside the preheated oven and bake for about 30 minutes at 375 degrees F.
Remove the foil cover and bake for another 20 minutes.
Let it rest at room temperature for a few minutes.
Serve warm with garlic bread. Enjoy!
