These delicious treats never fail to satisfy me! Serve these Garlic Mushroom Chicken Thighs over rice, and you have yourself a meal to remember! Oh, man, you are so in for a treat. Enjoy!
For The Chicken:
½ tsp each of dried thyme and rosemary
1 tsp each onion powder and garlic powder
1 ½ lbs. (700g) boneless skinless chicken thighs (around 6-8 fillets)
¼ tsp cracked black pepper
2 tbsp olive oil
½ tsp salt
For The Sauce:
8 oz. (250 g) sliced brown mushrooms
1 tbsp fresh chopped parsley
½ – 1 tsp each of dried thyme and dried rosemary (adjust to your taste)
1 tbsp butter
4 cloves garlic, minced (or 1 tbsp minced garlic)
Directions:
Use paper towels to pat dry the chicken thighs. Discard any excess fat.
In a mixing bowl, add garlic powder, herbs, salt, onion powder, and pepper. Whisk until well blended.
Sprinkle the seasonings over the chicken, then rub each until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of oil and allow it to become hot.
Add the chicken and sear each side for about 8 minutes or until they turn golden brown. Transfer the chicken onto a clean plate.
In the empty skillet, add butter and allow it to melt.
Add the mushrooms and saute until soft. Sprinkle salt and pepper to season.
Add the parsley, thyme, rosemary, and garlic. Sauté until aromatic.
Put the chicken back into the pan, then toss until well coated by the butter mixture. Add more salt and pepper if needed. Make sure to taste first before adding anything.
Remove from the heat, then sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
