Ingredients:
6 rashers cooked bacon – chopped
1 yellow bell pepper – de-seeded and chopped
1 large onion – peeled and chopped
1 tablespoon tomato puree
2 cloves garlic – peeled and minced
1 tablespoon vegetable oil
1 red bell pepper – de-seeded and chopped
800 grams tinned chopped tomatoes
3 large chicken breasts – cut into bitesize chunks
100 grams strong cheddar cheese – grated
400 grams dried pasta shapes – (I used rigatoni)
120 ml double (heavy) cream
100 grams fresh baby spinach
½ teaspoon dried thyme
100 grams mozzarella – grated
A pinch of salt and pepper
½ teaspoon dried oregano
Small bunch parsley – roughly torn
Directions:
Prepare the oven and preheat to 375 degrees F or 190 degrees C.
Place a large pan with water on the stove and turn the heat to high. Add a bit of salt and allow the water to boil.
Add the pasta, then cook until firm to bite or al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
Place a large pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken and cook all sides until brown.
Add the onion and sauté until translucent.
Add the tomato puree, chopped peppers, garlic, oregano, thyme, salt, and pepper. Saute until aromatic.
Add the tomatoes and cream, then stir until well blended. Allow the mixture to simmer for a few minutes.
Add the cooked bacon, spinach, and pasta. Toss until well combined.
Remove the pan from the heat, then transfer everything into a baking dish and spread it evenly.
Sprinkle a generous amount of mozzarella cheese and cheddar cheese on top.
Place it inside the preheated oven and bake for about 25 minutes or until the top turns golden brown.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Sprinkle freshly chopped parsley on top to garnish.
