Ingredients:
Baked Chicken Breasts:
1 tbsp butter
0.5 ounces Italian Dressing mix packet (half the packet)
1.5-pound chicken (4 small chicken breasts or 2 large chicken breasts sliced horizontally in half)
Creamed spinach:
4 garlic cloves minced
⅔ c mozzarella cheese shredded
⅔ c half and half
1 tbsp vegetable oil
⅛ tsp salt
6 ounces baby spinach fresh
Other ingredients:
4 slices Pepper Jack cheese or Monterey cheese with jalapenos
4 slices bacon cooked
¼ c sun-dried tomatoes drained of oil, chopped into smaller bites
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Brush the bottom of a baking dish with butter.
Rub each chicken breast with the Italian salad dressing mix. Make to coat each well.
Arrange the chicken breasts into the prepared baking dish. Make sure to leave a small space between each chicken breast.
Place the baking dish inside the preheated oven and bake the chicken for about 15 to 20 minutes. Remove from the oven.
For the Creamed Spinach:
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of vegetable oil and allow it to become hot.
Add the spinach and cook for a minute until wilted. Transfer onto a clean plate.
Add half & half and minced garlic, then allow it to boil.
Add the shredded mozzarella cheese and stir until well blended. Allow the cheese to melt.
Turn the heat down to low and simmer for a minute until the texture becomes thick. Remove from the stove.
For the Smothered Chicken Breasts:
Add creamed spinach, sun-dried tomatoes, chopped bacon, and pepper jack cheese over each chicken breast.
Put them back inside the oven and bake for another 20 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve warm and enjoy!
