Ingredients:
2 c cheddar cheese, shredded
1 can 10.5 oz. cream of chicken soup
1 c cooked rice
1 can (15 oz.) corn kernels, drained
4 boneless skinless chicken breasts
1 medium onion, chopped
freshly chopped parsley, to garnish
1 ½ c chicken stock
Directions:
Lay the chicken breasts into the slow cooker.
Scatter the chopped onions over the chicken.
In a separate bowl, add the stock and soup. Stir until well blended.
Pour the mixture on top of the chicken and onions.
Cover the slow cooker and cook everything for about 8 hours on a low setting.
Remove the chicken from the slow cooker, then use two forks to shred them into small pieces.
Put the shredded chicken back into the slow cooker, then stir until well covered by the sauce.
Add the corn, cheese, and rice. Stir until well blended.
Sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
