Ingredients:
5 tablespoons canola oil
8 tablespoons unsalted butter, room temperature
2 yellow onions, halved and thinly sliced
12 thin slices of cheddar, Swiss, or American cheese
12 slices rye bread
1½ pound ground beef
Kosher salt and freshly ground black pepper
Directions:
Sprinkle salt and pepper all over the beef, then rub it until well coated.
Slice the meat into 6 ¼-inch-thick patties.
Place a 12-inch cast-iron skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of oil and allow it to become hot.
Add the onions, then sauté until soft. Season with salt and pepper to taste. Cook for a couple more minutes until they caramelize.
Move the caramelized onions into a mixing bowl.
Use paper towels to wipe clean the skillet.
Turn the heat to high, then add 1 tbsp of oil and allow it to become hot.
Add 2 patties at a time, then cook each side for about 4 minutes or until they turn brown.
Move the patties onto a clean plate. Repeat the process with the rest of the patties.
Add onions over each of the bread slices as well as cheese and a patty.
Top each with the rest of the buns.
Add butter over the top bun and spread it evenly.
Place them into the skillet and cook each side for a few minutes until golden brown.
Serve and enjoy!
