Ingredients:
Frying Chili Chicken:
¼ tsp pepper powder (crushed pepper)
2 to 3 tbsp cornstarch (white corn flour)
250 grams chicken boneless cubes (½ pound)
1½ to 2 tbsp all-purpose flour (Maida) (optional)
1 ½ tsp red chilli sauce (sweet & spicy, less spicy kind)
⅛ tsp salt or as needed
1 ½ tsp soya sauce (naturally brewed)
1 Egg white (use only as needed) or 2 tablespoons water
¼ tsp red chili powder (optional) or paprika or red chilli paste
To Season:
¼ tsp pepper powder
½ tsp red chilli powder (optional) or paprika or red chilli paste
1 tbsp soya sauce (naturally brewed)
¾ to 1 tsp vinegar (any or apple cider)
2 tbsp tomato ketchup
½ to 1 tsp sugar
2 to 3 tbsp water
2 tbsp red chilli sauce (adjust to taste) (sweet and spicy)
Other Ingredients:
1 tbsp garlic fine chopped
¼ to ½ c bell pepper (capsicum) – cubed
1 to 2 green chillies slit and deseeded (optional)
1½ tablespoon oil
1 to 3 tbsp Spring onion greens for garnish
1 sprig spring onion or scallions chopped (optional)
1 medium onion thinly sliced or cubed
Directions:
For the Chili Chicken:
Slice the chicken into small pieces, then place them into a bowl.
Add 1 ½ tsp chilli sauce, ¼ tsp pepper, salt, ¼ tsp red chilli powder, and 1 ½ tsp soy sauce. Stir until well mixed.
Add plain flour and cornflour. Toss until well coated.
Add the egg white, then stir until well mixed. Set aside.
Slice the bell pepper and onions into small pieces.
In a mixing bowl, add 2 tbsp chilli sauce, ½ tsp red chilli powder, 1 tbsp soy sauce, 2 tbsp water, 1 tsp sugar, 2 tbsp ketchup, and 1 tsp vinegar. Stir until well blended.
For the Chili Chicken:
Place a large pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken pieces, then cook until they turn golden brown. Transfer onto a clean plate lined with paper towels.
To Season:
Place a pan on the stove and turn the heat to high.
Add 1 ½ tbsp oil and allow it to become hot.
Add the garlic and sauté until aromatic.
Add the spring onions, onions, green chilis, and capsicum. Sauté until soft and aromatic.
Add the sauces, then stir until well blended. Simmer for a few minutes until the texture becomes thick. Season with salt and pepper to taste.
Add the chicken pieces, then toss until well coated by the delicious sauce.
