Ingredients:
2 tbsp olive oil
1 pound Italian sausage (454g)
1 red bell pepper, chopped
5 cloves of garlic, minced
1 pound box of penne or other pasta (454g)
1 tbsp butter (.5oz, 14g)
1 medium onion, chopped
½ c Parmesan cheese (1.5oz, 43g)
15 ounces can of chopped tomatoes (425g)
a large handful of baby spinach (about 2.3oz, 65g), chopped or not
1 chicken bouillon cube
¾ c sun-dried tomatoes, chopped (100g)
a handful of fresh basil leaves (about 1.5oz, 43g), chopped
salt and pepper to taste
1 c heavy cream
½ c water
Directions:
Pasta:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until firm to bite or al dente. Drain and rinse with cold water to stop the cooking process.
Transfer the cooked pasta into a large bowl.
Add butter and toss until melted completely.
Sauce:
Place a saucepan on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion and red pepper. Sauté until soft.
Add the sausage, then cook until crumbly and brown.
Add the garlic and sauté until aromatic.
Add the sun-dried tomato and cook for about a minute.
Add ½ cup of water, bouillon cube, and 1 can of tomatoes. Stir until well blended. Simmer for a few minutes.
Add the cream and stir until well blended. Simmer for another 2 minutes.
Add the Parmesan cheese and stir until melted completely.
Remove the pan from the heat, then add the baby spinach. Stir and allow it to wilt completely.
Add the basil, salt, and pepper to season. Stir until well blended.
Add the pasta and toss until well coated by the delicious sauce.
Serve immediately and enjoy!
