Ingredients:
1 ½ pounds pork tenderloin
For the Filling:
A pinch of red pepper flakes
3 oz. feta cheese
5 c packed baby spinach
½ a 7 oz. container sundried tomatoes packed in oil (About 6 tomato pieces), chopped
Pinch salt
3 garlic cloves
1 tsp olive oil
For the Coating:
2 tsp Dijon mustard
3 cloves garlic, grated
¼ c balsamic vinegar
½ tsp black pepper
1 heaping teaspoon Kosher salt
1 tbsp rosemary, chopped
1 tsp lemon zest
2 tbsp olive oil
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Place a skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add grated garlic and red pepper flakes, then sauté until aromatic.
Add the spinach and cook until wilted completely. Sprinkle salt to season.
Transfer the spinach mixture on a paper towel, then squeeze it to discard most of the liquid.
Transfer the squeezed spinach into a mixing bowl, then add the feta cheese and tomatoes. Stir until well blended.
To Make the Topping:
In a mixing bowl, add oil, garlic, balsamic vinegar, mustard, salt, pepper, lemon zest, and rosemary. Stir until well blended.
Assemble:
Slice the tenderloin lengthwise beginning from the middle.
Top it with the spinach mixture and spread it evenly.
Fold the loin, then use kitchen twine to tie it. Repeat the process with the rest of the ingredients.
Lay the stuffed pork into a roasting pan. Add the topping on top and spread it evenly.
Reduce the heat of the oven to 375 degrees F.
Place them inside the preheated oven and roast for about 20 to 30 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve warm and enjoy
