This Slow Cooker Chicken Fajitas will surely make your day extra special! Oh, man, you have got to give this recipe a try if you want to taste perfection! Feel free to add more ingredients to this very simple recipe if you prefer. Enjoy!
Ingredients:
4 cloves garlic, minced
1 large yellow onion, halved and sliced
2 pounds boneless skinless chicken breasts
1 (14.5 ounces) can petite diced tomatoes with green chillies
3 bell peppers (preferably 1 red, 1 yellow, and 1 green) cored and sliced
2 tablespoons fresh lime juice
2 ½ teaspoons chilli powder
1 teaspoon salt
¾ teaspoon pepper
1 teaspoon paprika
¾ teaspoon ground coriander
2 teaspoons ground cumin
1 tablespoon honey
For Serving:
Cilantro, sour cream, salsa, guacamole or sliced avocados, shredded Mexican cheese (optional)
12 6-inch flour tortillas
Directions:
Add ½ of the canned tomatoes to the bottom of the slow cooker and spread them evenly.
Add ½ of the onions and ½ of the peppers over the tomatoes.
Add the chicken and garlic on top.
Add coriander, cumin, chilli powder, paprika, salt, and pepper into a mixing bowl. Stir until well blended.
Sprinkle the seasonings over the chicken and make sure to coat each well.
Spread the rest of the potatoes over the chicken breasts.
Place them over onions into the slow cooker.
Cover the slow cooker and cook for 3 hours on high heat or 6 hours on low heat.
Remove the chicken breasts from the slow cooker, then slice them into small cuts.
Add lime juice and honey into a mixing bowl. Stir until well blended.
Pour the mixture into the slow cooker and stir until well blended.
Put the shredded chicken back to the slow cooker and season with salt and pepper to taste. Stir until well mixed.
