Talk about a complete meal! This Sausage and Rice Skillet is my ultimate comfort food! Oh, man, you have got to give this one a try if you want to taste perfection! Feel free to add more ingredients if you wish. Enjoy!
Ingredients:
4 cloves garlic – minced
1 small white onion – quartered and sliced
12 ounces package smoked sausage
1 ¼ c white rice
5 tablespoons tomato paste
2 teaspoons olive oil
½ yellow bell pepper – sliced
½ red bell pepper – sliced
1 ½ tablespoons parsley – chopped
1 ¼ c low-sodium chicken broth – divided
⅛ teaspoon cayenne pepper
1 teaspoon paprika
½ teaspoon kosher sea salt
½ teaspoon ground black pepper
Directions:
Add rice into a small saucepan. Refer to the directions provided on the package on how to cook it.
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the sausage and cook until brown on all sides. Transfer onto a clean plate.
Add the onion and peppers, then sauté until soft and translucent.
Add the garlic and sauté until aromatic. Season with salt and pepper to taste.
Transfer the sauteed ingredients onto the plate with the sausage.
In the same skillet, add ¾ cup of chicken broth and tomato paste. Whisk until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
Cook the tomato paste for a minute to remove the raw taste.
Sprinkle cayenne and paprika. Stir until well blended.
Add the cooked rice, sauteed ingredients, sausage, pepper, and the rest of the chicken broth. Stir until well blended.
Remove from the heat, then sprinkle freshly chopped parsley on top to garnish.
Serve right away and enjoy!
Notes:
Feel free to use Italian sausage and Italian seasoning for an Italian version of this dish.
