Ingredients:
½ c ground pork rinds or ⅓ c almond flour
½ c Parmesan cheese
1 egg lightly beaten
½ tsp black pepper freshly ground
1 tbsp grass-fed butter
1 medium white onion finely chopped
500 grams ground beef chuck works great!
1 clove garlic finely minced or pressed
our keto marinara sauce to taste (I do roughly 2 c)
⅓ c heavy whipping cream
1-2 tsp kosher salt to taste
¼ c fresh parsley finely chopped

Directions:
Place a skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onions and sauté until caramelized. Season with a bit of salt.
Transfer the caramelized onions onto a clean plate.
In a mixing bowl, add the pork grinds, ground meat, parsley, heavy cream, egg, Parmesan cheese, caramelized onions, pepper, and salt. Stir until well blended.
Shape small balls out of the mixture.
In the same skillet, a bit of olive oil and allow it to become hot.
Add the meatballs and cook until brown.
Transfer the meatballs onto a clean plate lined with paper towels to drain excess oil.
Add the marinara sauce into the skillet and simmer for a few minutes.
Add the meatballs back into the skillet and toss until well coated by the delicious sauce. Simmer for a few more minutes.
Garnish with your preferred herbs.
