Ingredients:
3 c shredded Mexican cheese blend
2 cans (16 ounces) refried beans (refried beans)
12 flour or corn tortillas (8-inch ones)
1 can (15 ounces) black or pinto beans (rinsed and drained)
Beef Layer:
2 tbsp taco seasoning
1 ½ lbs. ground beef
1 can (7 ounces) diced green chiles
Salt and pepper to taste
3 c salsa
6 cloves garlic (minced)
1 small onion (finely diced)
1 green bell pepper (finely diced)
Cornstarch Slurry:
4 tbsp water
2 tbsp cornstarch
Toppings:
1 c shredded Mexican cheese blend
1 c salsa
Directions:
Put the baking rack in the centre of the oven.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×13-inch-deep casserole dish.
Add a large skillet to the stove and turn the heat to medium-high.
Add 2 tbsp of oil and allow it to become hot.
Add the ground beef, then cook until crumbly and brown. Remove the rest of the fat and leave about 2 tbsp in the skillet.
Add the onions, bell pepper, green chilis, minced garlic, taco seasoning, and salsa. Sauté until soft and aromatic. Sprinkle salt and pepper to season.
Simmer everything for 2 minutes, then turn the heat down to low and simmer for 5 minutes more.
Add the slurry, then stir and cook for a few minutes until the texture of the sauce becomes thick. Remove the skillet from the stove.
To Assemble the Lasagna:
Lay 2 tortillas on the bottom of the prepared pan.
Divide two tortillas into 4 pieces, then place them on the sides of the prepared pan.
Spread ½ of the refried beans over the tortillas.
Scatter about ½ of the pinto beans on top of the beef mixture layer.
Sprinkle about 1 ½ cups of shredded Mexican blend cheese over the beans. Repeat the process until everything is arranged in layers ending with cheese. Feel free to add more cheese.
Top the cheese with tortillas and 1 cup of salsa.
Sprinkle more cheese over the salsa. Thank me later!
To Bake:
Put it inside the preheated oven and bake for 30 minutes or until done.
Broil for another 3 minutes or until the cheese turns golden brown.
Remove from the oven.
