Ingredients:
2 tsp oil
2 tbsp butter
4 boneless pork chops – see note
salt and pepper – to taste
Dijon Cream Sauce
2 tbsp Dijon mustard
2 tsp minced garlic
1 tbsp butter
½ tsp salt, or to taste
¼ tsp cracked black pepper – or to taste
1 c heavy cream
1 c chicken broth – I used low sodium
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Sprinkle salt and pepper all over the pork chops, then rub each until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add oil and allow it to become hot.
Add the pork chops and sear each side for about 3 minutes or until they turn golden brown.
Remove the pork chops from the skillet and place them onto a clean plate. Cover with foil.
In the same skillet, add butter and allow it to melt.
Add the garlic and sauté until aromatic.
Add the chicken broth, cream, and Dijon mustard. Stir until well blended. Sprinkle salt and pepper to season.
Put the seared pork chops back into the skillet and toss until well coated by the delicious sauce.
Place the skillet inside the preheated oven and bake the pork chops for about 10 minutes or until done.
Remove from the oven, then sprinkle freshly chopped herbs and black pepper on top.
