Ingredients:
1 tbsp orange peel (fresh, zested)
2 whole Eggs
1 ½ c sugar
1 c butter (at room temperature)
½ tsp baking powder
3 c flour
¼ tsp salt
½ tsp vanilla
Filling
1 tbsp orange peel (fresh, zested)
1 c cranberries (fresh)
¼ c sugar
Directions:
Add sugar and butter into a mixing bowl, then beat until well blended.
Add the eggs, orange peel, and vanilla. Beat until well blended.
Add salt and baking powder, then whisk until well combined.
Divide the dough into two, then wrap each with plastic.
Place the dough inside the fridge to chill for about an hour.
For the Filling:
Add sugar, orange peel, and cranberries into a food processor. Pulse until well mixed.
For the Dough:
Sprinkle flour onto a flat surface, then place the dough on it. Roll and form into a 10×14-inch rectangle.
Top each with ½ of the filling and spread it evenly.
Roll each dough, then wrap it with plastic.
Place them inside the fridge to chill for another 2 hours.
To Bake:
Prepare the oven and preheat to 190 degrees c or 375 degrees F.
Remove the plastic wrap, then slice each into ½-inch pieces.
Arrange the slices onto a baking sheet. Make sure to leave a small space between each piece.
Place them inside the preheated oven and bake for about 10 minutes or until done.
Remove from the oven and allow them to cool completely at room temperature.
Serve warm and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days.
