Ingredients:
Bread
½ c butter, softened
3-4 medium or large bananas
2 Eggs
2 tablespoons brown sugar
2 c all-purpose flour
1 c sugar
1 ½ teaspoons vanilla extract
¼ teaspoon salt
2 tablespoons sour cream or Greek yoghurt
¾ teaspoon ground cinnamon
1 teaspoon baking soda
Crumb Topping
6 tablespoons butter, cold
1 teaspoon cinnamon
1 c brown sugar
1 c flour
Directions:
For the Bread:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in two 8×4-inch baking pans.
Add the bananas, ground cinnamon, vanilla extract, and brown sugar into a mixing bowl. Mash the bananas and combine everything.
In a separate mixing bowl, add sugar and butter. Beat until well blended and creamy.
Add the eggs and beat until well combined.
Add the baking soda, salt, and flour into the bowl with the wet ingredients. Stir until well mixed.
Add the sour cream and stir until well blended.
Add the mashed bananas, then stir until well mixed.
Fill each baking pan with the batter and spread it evenly.
For the Crumb Topping:
In a mixing bowl, add brown sugar, cinnamon, and flour. Whisk until well mixed.
Add the butter and stir until the mixture resembled coarse crumbs.
Sprinkle the mixture on top of the batter.
Place the baking pans inside the preheated oven and bake for about 40 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow the loaves to rest for a few minutes at room temperature.
