Ingredients:
3 pounds chicken thighs bone-in, skin-on
2 tbsp butter
1 medium onion diced
1 tbsp olive oil
Italian seasoning (divided)
Salt and pepper
3-4 thyme sprigs (leaves only)
½ c heavy cream
½ c white wine
3 garlic cloves chopped
1 c chicken stock
1 tbsp flour for thickening the sauce
Salt and pepper to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of olive oil and allow it to become hot.
Sprinkle Italian seasoning, salt, and pepper over the chicken thighs, then rub each until well coated.
Add the chicken thighs into the hot skillet and sear each side for 5 minutes or until they turn brown. Remove the chicken from the skillet and transfer them onto a clean plate.
In the empty skillet, add 2 tbsp of butter and allow it to melt.
Add the onion and sauté until caramelized.
Add the garlic, 1 tsp Italian seasoning, and thyme. Sauté until aromatic.
Add 1 tbsp of flour, then whisk and cook for a minute.
Pour in the wine, then stir until well blended. Scrape the bottom of the skillet to get the browned bits.
Add the heavy cream and chicken stock, then stir until well blended. Sprinkle salt and pepper to season.
Put the chicken thighs back into the skillet and spoon the delicious sauce over.
Transfer the skillet inside the preheated oven and cook for another 35 minutes or until done.
Remove from the oven and garnish with freshly chopped thyme.
Serve with rice or mashed potatoes. Enjoy!
