Ingredients:
8 large flour tortillas
6 large Eggs
6 slices bacon
8 oz. cheddar cheese, grated or sliced thin
salt and freshly ground black pepper, to taste
For serving:
Salsa, sour cream, and guacamole
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add the bacon, then cook until crumbly and brown.
Remove some of the bacon greases and leave a bit in the skillet.
Add cracked eggs and a bit of milk into a large mixing bowl. Beat until well blended.
Pour the egg mixture into the skillet with the crispy bacon. Sprinkle salt and pepper to taste.
Cook for a few minutes until the eggs are scrambled.
Top a flour tortilla with shredded cheese.
Add the bacon and eggs on top of the tortilla.
Sprinkle a generous amount of shredded cheese on top.
Arrange the quesadilla into the pan, then turn the heat to medium.
Cook the quesadilla for a few minutes on each side until the cheese has melted completely.
Remove the quesadillas from the pan and transfer them onto a clean serving plate.
Slice into even pieces.
Serve with sour cream, guacamole, and salsa. Enjoy!
Notes:
You can freeze the quesadillas. Arrange them into a baking sheet after cooking, then cover it with plastic wrap. Place it inside the freezer and it can last up to 2 to 3 months.
You can reheat the quesadillas at 350 degrees F.
