Ingredients:
4 boneless pork chops a cut from the blade preferred as it is fattier
2 medium onions cut into slim wedges
1 tsp arrowroot OR organic cornstarch OR ¼ tsp glucomannan
1 tbsp butter or coconut oil
1 tsp Worcestershire sauce
1 tsp arrowroot OR organic cornstarch OR ¼ tsp glucomannan
1 c beef stock
⅓ c sour cream
salt + pepper to taste
Directions:
Press the “Sauté” button on the Instant Pot.
Add butter and allow it to melt.
Add the onions and sauté until translucent.
Push the sauteed onions to one side of the pot, then add the pork chops. Cook until they turn brown. Sprinkle salt and pepper to taste.
Turn off the Instant Pot, then add the Worcestershire sauce and beef stock. Scrape the bottom of the pot to get the browned bits.
Seal the pot, then press the “Pressure Cook” button and cook for about 8 minutes.
Let the pressure release for about 5 minutes.
Remove the pork chops from the Instant Pot and transfer them onto a clean plate.
Press the “Sauté” button on the Instant Pot and let the sauces simmer. Add slurry and stir until well blended and allow the sauce to become thick.
Press the “Cancel” button on the Instant Pot, then add the sour cream and stir until well blended.
Spoon the delicious sauce on top of the pork chops.
Serve and enjoy!
