Ingredients:
Ingredients for Parmesan Crusted Chicken:
1 tablespoon olive oil, to Sauté
1 ½ pounds chicken breast, (2 large), patted dry with paper towels
½ lemon, sliced for garnish (optional)
1 tablespoon parsley, to garnish (optional)
For the Egg Mixture:
½ teaspoon Italian seasoning
1 garlic clove, minced
2 large Eggs
¼ teaspoon ground black pepper
½ teaspoon salt
For the Parmesan Breading Mixture:
3 tablespoons all-purpose flour
1 c Parmesan cheese, grated
Ingredients for Lemon Butter Sauce:
¼ c chicken broth
2 garlic cloves, minced
¼ teaspoon ground black pepper
8 tablespoons butter
¼ c lemon juice
Directions:
Slice the chicken breasts into two.
Use a meat tenderizer to gently pound each chicken piece.
Add all the ingredients for the egg mixture into a mixing bowl. Whisk until well mixed.
In a separate bowl, add all Parmesan mixture ingredients. Stir until well mixed.
Coat each chicken piece into the egg mixture, then into the Parmesan mixture. Shake off any excess.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken and cook each side for about 5 minutes or until they turn golden brown.
Place another pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic and sauté until aromatic.
Add the lemon juice, chicken broth, and pepper. Stir until well mixed and simmer for 2 minutes.
Add the sauce on top of the chicken and toss until well coated.
Remove from the heat, then sprinkle chopped parsley on top.
Serve with lemon slices and enjoy!
