Ingredients:
SLOW COOKER
1 tbsp beef bouillon
1 c water
4-5 lbs. beef brisket trimmed of excess fat
½ c homemade barbecue sauce (directions to follow)
1 tbsp reduced-sodium soy sauce
2 tbsp Worcestershire sauce
SPICE RUB
1 tbsp chilli powder
2 tbsp packed brown sugar
2 teaspoons EACH garlic powder, salt
2 tbsp paprika
¼ tsp cayenne pepper optional for more heat
1 teaspoon EACH onion powder, chipotle powder, pepper
½ tsp dried thyme
BARBECUE SAUCE
⅓ c packed brown sugar
⅓ c molasses
1 ½ c ketchup
¼ c seedless blackberry preserves
1 tbsp mesquite liquid smoke optional but recommended
¼ c apple cider vinegar
1 tbsp reserved Spice Rub from above
Directions:
Prepare the oven and preheat to 425 degrees F.
Line with parchment paper a large baking sheet.
Apply cooking spray in a 6-quart slow cooker.
Discard excess fat from the brisket, then rinse it with water. Use paper towels to pat it dry.
In a mixing bowl, add all the ingredients for the Spice rub. Whisk until well mixed.
Get 1 tbsp of the spice rub, then add it into a mixing bowl. Set aside.
Coat the brisket with the rest of the spice rub.
Put the coated brisket onto the prepared baking sheet.
Place it inside the preheated oven and bake for about 30 minutes.
In the bowl with the spice rub, add all the ingredients for the BBQ sauce. Stir until well blended.
Get about ½ cup of the BBQ sauce, then add it into the slow cooker as well as 2 tbsp of Worcestershire sauce, 1 cup water, 1 tbsp beef bouillon, and 1 tbsp soy sauce. Stir until well mixed.
Transfer the brisket into the slow cooker.
Cover the slow cooker and cook for about 8 to 10 hours on a low setting until the brisket is fork-tender.
Transfer the brisket onto the prepared baking sheet. Brush the top with the BBQ sauce.
Place it inside the oven and broil for about 5 minutes or until the sauce is caramelized.
Remove from the oven and let it rest for a few minutes at room temperature.
