Ingredients:
6 pork chops
1 lb. cremini mushrooms – sliced
1 tbsp olive oil
1 c onion thin sliced
2 tbsp butter one to sear chops, one to brown mushrooms¼ c flour
¾ c beef stock
Salt and pepper to taste
¾ c chicken stock
Directions:
Sprinkle a bit of salt and pepper over the pork chops, then rub until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tbsp butter and oil, then allow them to become hot.
Add the pork chops and sear each side for about 3 minutes or until they turn golden brown. Make sure to sear them in batches to prevent overcrowding.
Remove from the skillet and transfer the pork chops onto a clean plate. Cover them to keep warm.
Reduce the heat to medium, then add 1 tbsp of butter and allow it to melt.
Add the onions and mushrooms, then sauté until soft and a bit caramelized. This usually takes about 5 minutes.
In a mixing bowl, add beef and chicken stock. Stir until well blended.
Add flour and whisk until well mixed.
Pour the mixture into the skillet and simmer for about 3 minutes or until the texture becomes thick.
Turn the heat down to low, then put the pork chops back to the skillet. Spoon the delicious sauce on top. Cook for another 10 minutes or until done.

Note:
Feel free to add cream instead of ¼ cup of the stock.
