This recipe has always been a part of my family since I was a little kid. I remember my grandma used to cook this all the time! I am so grateful to her for sharing with me this recipe because now, I get to share it with you as well. How awesome is that? I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go. Enjoy!
Ingredients:
¼ c olive oil
10-12 strips thick-cut bacon
6 large garlic cloves
1-pound dried spaghetti
1 tbsp salt
freshly grated Parmesan cheese – garnish
chopped fresh parsley – garnish
Directions:
For the Pasta:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt. Cook until al dente. Drain and rinse with cold water to stop the cooking process, then set aside about 2 ½ cups of the pasta water to later use.
For the rest of the ingredients:
Place a pan on the stove and turn the heat to medium-high.
Add the chopped bacon and cook until crispy. Remove from the skillet onto a clean plate lined with paper towels to drain excess grease.
In the same skillet, add the garlic and sauté until aromatic over medium-low heat.
Add about ½ cup of the reserved pasta water and stir until well mixed. Allow the mixture to boil.
Add the cooked pasta and toss until well combined. Add more pasta water if needed.
Add the crispy bacon and toss until well combined. Add salt if needed.
Sprinkle grated Parmesan cheese on top as well as freshly chopped parsley.
Serve immediately and enjoy!
