Ingredients:
5 cloves garlic, smashed
3 lbs. pork loin
1 tsp paprika
½ tbsp Italian seasoning
½ tsp onion powder
⅓ c chicken broth
3 tbsp balsamic vinegar
4 tbsp olive oil, divided
1 tsp salt
¼ tsp fresh ground pepper
Directions:
Use paper towels to pat dry the pork loin.
In a mixing bowl, add black pepper, onion powder, paprika, and salt. Whisk until well mixed.
Rub the pork loin with the mixed seasoning.
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of olive oil and allow it to become hot.
Add the pork loin and sear each side until they turn golden brown.
Add garlic, olive oil, and balsamic vinegar into a food processor. Pulse until well mixed.
Add the Italian seasoning and pulse until just blended.
Pour in chicken broth to the slow cooker.
Lay the pork loin over the broth with the fatty part facing up.
Brush the fatty part with the balsamic vinegar mixture.
Cover the slow cooker and cook for about 5 hours on a low setting or 3 hours on a high setting.
Remove from the slow cooker, then place the pork onto a chopping board. Let it sit for a few minutes.
Slice the pork loin to even pieces.
